In 2021 this new sake micro-brewery was established in Northern Niigata prefecture on the shores of the Fukushimigata lagoon which is an area of stunning natural beauty and wildlife. This brewery obtained a new sake manufacturing license with specific conditions about the making of Japanese sake strictly for export to international destinations only, but with some scope for craft sake development utilising originality and ingenuity in the Japanese domestic market also. Finally, the long dreamed for opportunity had come as the door to new entrants in the strictly controlled sake market was opened.
The site for the new brewery on the lagoon was chosen because this area is symbolic of nurturing diversity.Lagoon Brewery’s aim is to make a wide variety of exciting sake and to spread its wings (like a migratory bird) to reach the corners of the world to make sake a common language. They have a strong sense of exploration and a focus on their local area and sustainability. The brand name Shoku 翔空 means ‘soaring in the sky’ and evokes the wings on which dreams are flying.
