Seto Sake Brewery uses local yeast and locally grown rice to develop this mellow AZUMACHO JUNMAI GINJO. Soft aromas of melon and Bosc pear lead into a smooth, medium-bodied sake. Melon and pear skin flavours feature and there is clean acidity on the finish that makes this a great drink to accompany crisply fried fish dishes.
AZUMACHO JUNMAI sake has soft, enticing aromas of honey, steamed rice, and freshly toasted granola. On the palate the sake is immediately impactful with flavours of butterscotch and salted caramel merging with savoury umami and an off dry long finish. This sake is made with a locally grown table rice called Reihou and Brewing Society yeast No 9 and feels “just right” alongside more substantial flavours which may lean toward the salty or spicy spectrum.
