This sake has been brewed with a four stage fermentation technique to intentionally make a sweeter style of sake with hits of persimmon and fresh musk melon. On the nose there is banana candy aromas which lead you into a smooth, velvety sake which also has some decent acidity, balancing the higher residual sugar, and tightening the drinking experience. Drink this sake in a chilled down glass to appreciate the elegance.
A brewery number is recorded on the label – R309. This means that this sake was made in Japanese Calendar Brewing Year Reiwa 3 (2021), and it was the 9th batch. As this brand undergoes evolution each batch may change in flavour as improvements are made.
