A full flavoured expression of rice brewed with tomatoes and basil in a unique sake using some of the best produce in Lagoon Brewery’s local area of Kita-ku, Niigata City. The tomatoes and basil are grown at Takagi farm close to the brewery. The farm is a certified eco producer using minimal fertiliser and pesticides and focusing on sustainable agriculture.
The fruity / Ginjo aromas arising from the sake yeast and the scent of tomatoes and basil herbs overlap. There is a weaving together of flavours in the fermentation tank and the combination of umami, acidity and bitterness from the tomatoes, rice, and basil results in a really tasty sake that’s hard to put down. Recommend experimenting with different serving temperatures depending on what food you are eating.
