Niida Honke was established in 1711 in the peaceful, rural area of Koriyama, Fukushima Prefecture. Currently the 18th generation family successor Yasuhiko Niida is shaping a sake brewing dynasty based on firmly held beliefs around natural farming, sustainability, minimal environmental impact, and natural fermentation philosophies. This brewery is a Natural Sake pioneer and leads the way with its dedication to practicing what it preaches and working steadily to preserve its rice fields for the community and future generations they will support.
Niida Honke focuses on Shizen-mai – a rice crop grown naturally without the use of pesticides and chemical fertilisers, most of which have achieved JAS organic certification. The brewery crafts 100% Junmai or pure rice-based sake and uses Kimoto, a traditional fermentation starter, for its entire production. It has two main brands Odayaka meaning ‘Calm’ and Shizenshu meaning ‘Natural Sake’.
