This brewery was founded in 1772, and is located in Morioka City, Iwate Prefecture. The character and life of Kiku no Tsukasa sake is shaped by the water used in brewing. This arises as an underground water source from the Nakatsu river, flowing directly behind the brewery.
The Nakatsu River is a clear stream that flows through Morioka City and is a river full of natural wonder - sweetfish in the summer, salmon spawning in the fall, and swans in the winter. The water quality is very clear because it contains a moderate amount of minerals that arise from the bedrock of the Iwate Mountains, and it is used for all brewery work. Their focus is on refiningsake brewing that is popular locally, but also development of new metropolitan and international markets.
