The ultimate small batch, artisan sake brewery - Abe was established in the Kashiwazaki area of Niigata in 1804 and the sixth-generation owner Yuta Abe is now guiding the brewing in this modern world.
Over the last ten years the current generation has been able to slowly increase production from a very small 50 koku to around 400 koku annually by focusing on small batch techniques and making sake celebrating the flavour of local rice with acidity. Brewing knowledge has been passed from father to son through the generations via the ‘uchi – toji’ traditional system which reinforces their intellectual curiosity and enjoyment of fermentation.
The brewery’s goal is very high level, and they want to produce sake that aims for more than just deliciousness. Abe wants their sake to have an overwhelming, impactful, and memorable taste. They are prepared to invest all their time and energy to achieve this.
