The ultimate small batch, artisan sake brewery - Abe was established in the Kashiwazaki area of Niigata in 1804 and the sixth-generation owner Yuta Abe is now guiding the brewing in this modern world.
The brewery has a very small annual production volume of around 50 koku (1 koku = 180 Litres) and focuses on hand made sake celebrating the flavour of local rice and acidity. Brewing knowledge is passed from father to son through the generations via the ‘uchi – toji’ traditional system which reinforces their intellectual curiosity and enjoyment of fermentation.
The brewery’s goal is very high level, and they want to produce sake that aims for more than just deliciousness. Abe wants their sake to have an overwhelming, impactful, and memorable taste. They are prepared to invest all their time and energy to achieve this.
