The label on this bottle depicts a Kitsune which is a supernatural fox in Japan folklore known for their supernatural spiritual properties and association with Inari the Shinto god of rice. Lagoon’s brewer Tanaka drew this cheeky looking Kitsune emerging from a field covered in hops as they are the angel of the rice fields and in this case symbolises his sake.
This is a unique craft sake brewed with a combination of rice and Citra hops. After filter pressing the colour of the sake is a deep purplish-pink due to the phenols in the hops. The flavours expressed in this sake will ping stored memories for many beer drinkers as there is the distinctive aroma, freshness, bitterness and citrus feel of hops lacing through the sake. The sake rice and hops are fermented with both yellow and white koji to give enhanced acidity and dial up the refreshing vibe of Hoppe. Enjoy this sake cold and in glassware to highlight the interesting colour and incredible aromas.
