Celebrating Niigata’s winter crop of its speciality Le Lectier pear. This fruit was known as the “Phantom Pear” because it was rarely grown, very difficult to cultivate and is only available for one month from late November to Late December. Lagoon Brewery once again collaborates with Eco farmer Yamayo Orchard to have access to these rich, luxurious and fragrant fruit which it ferments with a mixture of local Niigata rice to give some lifted Ginjo fruity notes to complement and merge with those of the pear. The brewing process also expresses some good acidity to balance the rich fruitiness of Le Lectier pear and add a crisp finish.
The Doburoku version is unfiltered and retains soft fragments of dissolving steamed rice which gives a smooth, creamy, rich texture to the drink. There can be some spritzy, lively bubbles on opening this bottle which lifts the bright and delicious flavours. Serve cold or over crushed ice for a very adult fruit slushie.
