Kawatsuru literally means “river crane” and dates back to the time the founders of the brewery saw these beautiful birds flutter down to the pristine waters of the Saita river. This river also gives life to the rice fields in the area surrounding the brewery and contributes to the rich and refreshing style of the sake made by Kawatsuru.
