Fukurokuju Sake Brewery is one of the pillars of Akita sake brewing and was established in 1688 in the small town of Gojome in central Akita. The focus of the brewery is to brew sake that inspires the five senses using high quality local rice and water, crafted by a brewing team who is constantly striving to improve their skills and test new methods of production.
Currently the sixteenth generation of the family, Koei Watanabe, is crafting a legacy for his family shaped by the introduction of the high-quality sake brand called ‘Ippaku Suisei’ in 2006. This sake style attracted attention from sake fans outside Akita prefecture and, despite limited production, continues to be popular among Japan’s premium sake brands.
The name Ippaku Suisei 一白水成 is derived from Japanese kanji with the following meaning “white (白) rice and water (水) becomes (成) the most (一番) delicious sake.”
