Toranomon Distillery is a bar/izakaya with a gin distillery; the distillery opened in 2020 in Toranomon Yokocho, the restaurant and bar area of the Tokyo suburb of Toranomon Hills. The Distillery’s concept is to discover Tokyo's local ingredients and disseminate them in the form of gin.
They create gins with a commitment to using ingredients produced in Tokyo, from the base spirit to the water. “Islands spirits”, the local Tokyo shochu, produced in the small volcanic Izu islands near Tokyo are essential to the gin. This shochu uses barley koji in conjunction with either barley or sweet potato or a blend of both to produce a spirit with great depth and flavour which is quite different from the shochu produced in Southern Japan. Water for the Gin distilling is soft spring water from Ome Sawai which is located at the source of Tokyo’s Okutama river.
