Hayakawa Sake Brewery was established among the rice fields, on the plains of the Komono region, in northern Mie prefecture. This small brewery draws its ingredients from the rich nature that surrounds them including the pristine clean underground water arising from the nearby Suzuka mountain range. All of the brewing work is done by a family of three with an annual production of only 300 – 400 koku.
In 2009 Hayakawa Sake Brewery released a new label called Tabika which is inspired by the sparkling light which is seen radiating from the water in the rice paddies surrounding the brewery. The first releases from this range used the heirloom ancestral grain Bizen Omachi, which the fourth-generation master brewer Toshihito Hayakawa had become enthusiastic about when undertaking his sake brewing training. Tabika brand has propelled the brewery into the spotlight, as sake connoisseurs have praised the quality and taste. Hayakawa continues to evolve and is one of Mie Prefecture’s most promising breweries attracting wider attention.
