A sake made from a locally grown, naturally farmed, heirloom rice called Kame no O. It has pronounced aromas of apple, nashi pear and green banana which follow through on the palate for a refreshing, clean flavour profile. It is medium-sweet with great balance of acidity on the finish with a hint of tart astringency from the Kame no O rice varietal.
A brewery number is recorded on the label – R305. This means that this sake was made in Japanese Calendar Brewing Year Reiwa 3 (2021), and it was the 5th batch.
As this brand undergoes evolution each batch may change in flavour as improvements are made.
