A creative and unique Doburoku /craft sake which combines deep purple Kyoho grapes and local Niigata rice fermented by wine yeast. The large juicy grapes are grown by Niigata Eco farmer Yamayo Orchard and compose more than 50% by weight of the total rice volume used to produce this sake. In addition to grape pulp and juice, during the fermentation grape skins are also added which results in a pleasant bitter accent to balance the fruity sweetness.
The Doburoku version of this sake is unfiltered, texturally rich and creamy and has a pale pink/purple hue. There is delicious flavour of grape, some liveliness and spritz in the bottle and good acidity to interest the palate. Serve cold or in summer “on the rocks” for a memorable drinking experience merging the best of wine, vine and rice grain.
