This is the unfiltered or Doburoku version of the Lagoon Forest sake made with infused Kuromoji aromatic wood that grows wild in the mountains of the Tochio area of Niigata. The aroma imparted by the Kuromoji is refreshing and botanical and the main ingredient is the polyphenol known as Linalool which is popular in aromatherapy. This ingredient is reported to have a very relaxing, sedative effect.
This sake includes all the creamy, steamed rice notes as well as some spicy elements giving it an almost savoury nose. This sake has not been pasteurised with heat or diluted with water and has been bottled without any significant settling period (origarami).
