Nichi Nichi Sake Brewery was founded in Kyoto in 2022 as a new base for inspirational sake brewer Hidehiko Matsumoto. This new chapter unfolded following Matsumoto’s departure from his long tenure as Tōji / Master Brewer at his family’s Matsumoto brewery.
The creation of brand Nichi Nichi allows him to fully express his sake brewing philosophy and distinct point of view, revolving around the purity and grace of Kyoto’s Fushimi water and the umami flavours derived from rice raised in the premium fields of neighbouring Hyogo prefecture. The small brewing team uses traditional Kimoto techniques, crafting sake with a subtle complexity, quickly gaining a strong fan base eager for the current limited production. Matsumoto Tōji doesn’t provide detail around sake classification and rice polishing rates on sake labels, instead preferring the drinker to focus on the contents of the bottle and the pleasure of the drinking experience.
The name Nichi Nichi 日日is derived from a zen proverb “nichi nichi kore koujitsu” which literally translates to ‘every day is a good day’ or ‘try to spend every day meaningfully focusing on the important things in your life’.
