A creative and unique craft sake which combines deep purple Kyoho grapes and local Niigata rice fermented by wine yeast. The large juicy grapes are grown by Niigata Eco farmer Yamayo Orchard and compose more than 50% by weight of the total rice volume used to produce this sake.
In addition to grape pulp and juice, during the fermentation grape skins are also added which results in a pleasant astringency to balance the fruity sweetness.

This craft sake is filtered using the ‘fune shibori’ method where bags full of the fermenting rice and fruit mash are laid into a deep hollow boat-shaped box, with pressure applied from above to extract the sake. The clear blush pink/purple sake that results has delicious flavours of grape, with the umami depth of sake. There can be some pleasant gentle spritz sensation on the tongue and good acidity to interest the palate. Serve cold or in summer “on the rocks” for a memorable drinking experience merging the best of wine, vine and rice grain.
