Noguchi Naohiko is one of the most famous master brewers (Tōji) in Japan and is widely known as “The God of Sake”. In 2017, a new brewery bearing his name was built on the outskirts of Komatsu, Ishikawa prefecture. This site was chosen for its peaceful, rural outlook and abundant underflowing water from the sacred Hakusan mountains.
The vision of this brewery is to bestow the skills and spirit of Noguchi-tōji to the future generations of sake brewers working alongside him. As a culmination of more than 70 years of making sake, the teams challenge is to brew the ultimate “sake from our soul”.
