This is a limited release from Abe Sake Brewery to celebrate the flavour of Ipponjime rice. Recently due to the very hot climate in Niigata the resulting rice grains were very hard and the harvest was lower in volume, which limited production to only two tanks of Abe Yellow. Normally three tanks are brewed annually for this seasonal release.
This sake is an origarami style which means the freshly produced sake goes directly into bottle without an intervening ‘settling in tank’ period. As a result, the sake is lightly cloudy and has a zesty vibrancy due to some gentle fermentation bubbles trapped during bottling.
The sake has a mixed fruity and lactic character with aromas of fresh banana, mango, lychee, rambutan, steamed rice cake and yoghurt. On the palate the sake has a great fusion of apple, nashi pear, mandarin rind flavours with a flush of acidity enhancing the impact and giving a clean aftertaste.
Refrigerate for storage and after opening. Care required on opening bottle foil guard and cap.
