This sake was made in 2018 in the second year of Noguchi Naohiko Sake Institute’s operation. The sake was made to commemorate the 70th year of Noguchi-Toji’s sake brewing career, which he started aged just 16 years old in 1948. The 2018 vintage is from a batch of sake that Noguchi himself selected as being of the highest quality and he has been involved with every step of the sake’s production and maturation. There are 5500 bottles in the Noguchi Naohiko 01 edition.
This sake is bottled in a distinctive asymmetric glass bottle designed by internationally renowned Ishikawa-based Japanese ceramicist and artist, Toshio Ohi. The design of the bottle is a distorted curve almost resembling the shape of a polished rice grain and has a hand-crafted feel mirroring the hands-on crafting of this sake by Noguchi-Toji.
The matured sake has a glossy and gorgeous aroma of peaches and apples with a thick sweetness on the palate condensed by long term, low temperature ageing. It has a long finish with elegant acidity. This sake is pasteurised and is cared for in Australia in minus 5 degree warehouse conditions after refrigerated transit from Japan.
