This is a seasonal sparkling sake that is produced in the winter to celebrate the release of fresh sake brewed with Kagawa’s Sanuki Olive yeast and locally grown Oseto rice. This sparkling sake derives its beautiful foamy bubbly mousse from secondary in-bottle fermentation and has a lively character. It is styled as a Nama (unpasteurised), Nigori or lightly cloudy style with some fine particles of rice and koji dispersed in the glass on pouring.
This is a new generation sake with a light wine-like mouthfeel, fresh acidity and a subtle fruity, muscat grape sweetness creating a great balance of sweet and sour flavours in the glass. Recommend chilling it down to enjoy the first burst of minerality in the glass and then back notes of fruit, creamy rice coupled with a refreshing finish. Keep refrigerated at all times during storage and after opening and open with care first, before mixing sake lees.
