This unique sake was produced by Kawatsuru Sake Brewery to showcase the regional specialities of Kagawa Prefecture - olive tree cultivation and locally grown rice. It is a limited edition sake crafted in the Japanese spring to be released as an unpasteurised namazake with refreshing tastes and vibrant brightness. Intentionally it has been made with a lower alcohol strength of 13% ABV and clean acidity so it will match well with light vegetable salad dishes with olive oil dressing, tuna carpaccio, Parma ham, vegetable crudités and dipping sauce for example.
The yeast used to ferment the sake was extracted from Kagawa cultivated olive trees and is known as Sanuki Olive Yeast (K018). This yeast in fermentation creates a sake with green apple, muscat grape, kiwi and pandan flavours with great playful acidity creating an almost wine-like feeling. Aromas of green grape are mingled with moss, chestnut and freshly cut mushroom with some pine needle and forest floor earthiness. The iconic green label is instantly identifiable and accounts for the “G” in the name of this Sake. On closer inspection there is an imprint of an olive branch and olive positioned centrally.
