Kawatsuru Nora Kimoto Nama Genshu is an unpasteurized, undiluted kimoto-style sake made with the help of wild yeast inhabiting the brewery, part of Kawatsuru's experimental natural series.
NORA stands for
N – Natural (no additive brewing),
O – Original (using traditional starter techniques e.g., Kimoto),
R – Refine (growing and developing new techniques from old),
A – Aeonian (lasting for a long period of time).
This sake stands out for its distinctive acidity and layered, savoury flavours, with a lively, vibrant profile that is characteristic of the Nama Genshu style. Expect an expressive combination of pear, chrysanthemum flower and cut mushroom aromas, subtle sweetness, and a complex, savoury palate with textural dried fruit notes, spice and earthy hints. The umami finish is long and lingering, making it especially versatile with food. This sake is a treat for those who appreciate robust, natural, and complex kimoto-style sake with a lower ABV.
