This is the point of entry into the expanding Nichi Nichi sake range, showing the unique viewpoint of this producer, the focus on natural brewing techniques, carefully selected rice and the local soft mineral Fushimi water. Yamadanishiki rice is the firm favourite for Nichi Nichi production and this sake is designed to express more of the rice grain’s base flavour profile with less emphasis on the yeast-derived fruit / floral notes, in combination with some textural acidity.
What results is a delicious light, cleansing sake which has an almost velvet, suspended feeling on the palate and a suggestion of steamed rice, golden apple, grape, cucumber skin and chrysanthemum stem with a crisp, dry white pepper acidity emerging on the finish. With a low alcohol by volume (ABV) of 12% this sake is definitely part of the recent movement by new generation brewers towards managing sake fermentations to give a great range of lower ABV options with fully developed flavour profiles. This new style of sake which eschews traditional classification and does away with labelling norms is quickly gaining momentum and makes a welcome addition to the portfolio.
