This sake is made from Tamasakae rice which is a high quality sake rice that has its origin in Shiga prefecture. It is a rice variety that is extremely difficult to grow because of its tall stalk height and large heavy grain size that makes it prone to falling over so supply for brewing is scarce and consequently attracts a higher price. The Tamasakae rice for this production was sourced in collaboration with local Shiga brewery Tomita Shuzo who make sake brand Shichihonyari.

This sake has a supple, wine-like feel with flavour notes of peach, yellow rock sugar, Osmanthus tea and chrysanthemum leaf. The sake is very well balanced with a medium body, and a blend of moderate acidity and a pleasing pithy bitterness reminiscent of chewy tangerine peel. There is a nice tension in this sake which is accentuated at colder temperatures and ‘relaxes’ with some warmth in the glass.
