This sake is made with Yamadanishiki rice grown in the Special A Tojo Akitsu district of Hyogo Prefecture, an area recognised throughout Japan as producing rice of the highest grade and superior quality. Nichi Nichi Sake Brewery has designated rice fields in this area and works closely with contracted farmers participating in cultivation of the annual rice crop. This sake is labelled as Akitsu Yamadanishiki to reinforce its premium origin and to underline the importance the brewery places on rice.
The aroma of this sake has some shy restraint opening with delicate fruitiness of white peach, melon, Japanese pear, watermelon rind, coriander and green grape. An amalgam of these flavours sweep through the mouth with a light, creamy texture, sometimes accompanied by a fine gentle bubble enhancing the freshness. Umami notes emerge adding subtle layers and depth with great acidity on the dry finish, providing a counterpoint to the opening. A modern sake with a clean, light “just right” feeling showing great finesse to achieve this degree of delicious balance. Serve chilled down and cold to increase tension in the sake and thin glassware is recommended for better flavour dynamics.
