This is a unique upcycled gin made from discarded sake lees.

In Itoshima City, Fukuoka Prefecture, people have taken over abandoned rice terraces and are growing rice there, creating a life of self-sufficiency in food, energy, and work. Using the rice and lemongrass produced there, Fukuoka craft sake brewery LIBROM makes sake, and the sake lees from that process are used as the botanicals for this Toranomon Distillery gin. In addition, this upcycled gin is distilled using lemongrass, sweet green oranges, and Japanese peppermint harvested in Itoshima.

When diluted with hot water, you can enjoy the subtle ginjo aroma derived from the sake lees, and the refreshing flavour of the lemongrass and sweet green oranges distilled together also stands out.

The "BATON TOUCH" project is a collaboration between Itoshima Share House and the design group "WHW!" led by artist Chalkboy. This project was started with the desire to inherit the rice terrace culture and pass on the baton to the next generation and is the eighth product in the series.
