By using locally grown Omachi rice the brewery is hoping to support organic farmers and their methods. This sake uses Fukushima Omachi rice polished to 60% of its original grain size and crafted with Kimoto starter techniques using soft spring water. The result is a fragrant, aromatic sake with perfumed notes of melon, green banana, bubble gum, nashi pear and white blossom. The sake is smooth textured, and the rounded palate is medium dry with firm acidity working with the green kiwi, apple skin, and pandan leaf flavours leaving a pleasing bitter herbal edge on the finish.
Pouring this sake into tulip shaped stemware will accentuate the attractive aromas. This sake has had a single pasteurisation and refrigerated storage is recommended to preserve condition.
