This is a seasonal release from Niida, in small quantities of freshly pressed and bottled “Shiboritate”, to mark the commencement of a new brewing season. This sake is a Junmai Ginjo produced with Kimoto starter technique using locally grown Miyamanishiki rice polished to 60% of the original grain size. The brewery uses soft spring water to create this style.

Juicy pear, papaya, mango and honey aromas play on the nose with a background of chestnut and fresh mushroom. The sake opens with a vibrant pear, apple and mango flavours in the medium sweet range, and this is pulled back with refreshing acidity. There can be some fine gas bubbles and zest evident on opening as the sake is fresh, lively and unpasteurised. As is normal for a seasonal release, unpasteurised (Namazake) should be kept refrigerated at all times during storage and after opening.
