This Junmai sake has been designed to deliver a more robust experience of rice flavour, with an easier going, ‘compatible with most dishes’ style. The sake has a velvety texture and pleasant smooth, mouth-filling quality which broadens at warmer temperatures. It has some gentle fruit – melon and pear on the opening and then a fine grained drier umami sweeps across the palate finishing with clean acidity and a rim of pleasant orange pith bitterness. The brewer recommends drinking this sake at room temperature or heating this to around 50°C in a water bath to enjoy with warm dishes.
