Tabika sake is brewed using pristine, soft underground water, which stems from the rich nature of the nearby Suzuka Mountains. For this super luxurious Junmai Daiginjo, the heirloom rice grain Omachi is carefully cultivated by selected farmers and then the rice is polished very gently to leave just 40% of its original grain size. The result of an extended cold temperature fermentation is a sake that has alluring aromas of white peach, luscious green melon and baked apple. This fruity sweetness follows through combining with umami elements to create a rich palate which has the signature Omachi smooth mouthfeel.

This sake shows its class, with considerable grace and appeal, when served cold in a glass to capture the aromas. A natural sake to accompany refined Kaiseki Cuisine.
