Tajiri Farm is unique within the Tojo Special A rice region, as the only remaining producer to grow Yamadanishiki sake rice with no herbicides and no chemical fertilisers. Gikyo created this one-of-a-kind sake as a mark of respect for Tajiri Farm, and the Tajiri family, for their continuing commitment in this increasingly challenging environment. Gikyo Tajiri Farm hopes to encourage everyone, from brewery to restaurants to end consumers, to turn attention to the source producers, whose efforts are at the heart of the sake we drink.
At its core, Gikyo Tajiri Farm is rich and dense. The heavy, structured mouthfeel fills the palate with savoury rice umami, while the aroma is restrained with clean, steamed Koji rice, toasted grain, and soft natural undertones. Subtle hints of fruit and vanilla drift through, with a surprising refined clarity and elegance. The crisp and prominent acid profile prevents the heavy body from feeling overly sweet. This robust sake has incredible capacity for cellaring. While fresh, be taken for a ride with its rustic qualities; with cellaring at low temperatures, the acidity rounds out for a velvety and deeply complex flavour. With its deep dimensionality, the potential with food spans from delicate to robust flavours, partnering well with rich seafood such as fatty tuna sashimi and grilled Alfonsino collar, savoury and earthy dishes such as pan-seared duck breast and wild mushroom risotto.
