The flagship natural sparkling sake from Hokkaido’s Mori no Brewery. Named after the Ainu word for “snow”, this artisanal sake is made exclusively with organically grown Nanatsuboshi table rice from Rankoshi and pristine spring water from the Niseko mountain range.
UPAS is the result of a minimal handling, nature resonant production method. The mash remains entirely untouched during fermentation and is bottled undiluted. A natural in-bottle secondary fermentation (method champenoise) without artificial yeasts or temperature control creates its fine, persistent bubbles, while a small amount of delicate rice sediment remains suspended in the sake. When poured, the sediment drifts through the glass like falling snow, a quiet reflection of the Niseko landscape in winter.
It opens with a fine effervescence and a restrained woody aroma. The subtle umami from the sake lees balance with a fresh green apple palate, and a refreshing citrus acidity for a crisp finish. Serve well chilled in a white wine glass to allow the elegant bouquet drift to the nose. It pairs beautifully with traditional sashimi and sushi, yakitori, grilled chicken dishes, and soft cheeses with deep umami.
