Inspired by the vibrant, warm, and dynamic energy of the Niseko volcanic mountain range surrounding Mori no Brewery, APE derives its name from the word for “fire” in the indigenous Ainu language.
Brewed with Nanatsuboshi rice locally grown in Rankoshi, Hokkaido, APE undergoes initial fermentation in traditional wooden barrels (kioke). The sake is matured in used Bourbon whisky barrels to infuse the “flame”. A secondary fermentation in the bottle (method champenoise) creates naturally fine and long-lasting effervescence.
This strikingly clear sparkling sake entices the senses with delicate streams of persistent bubbles, a complex bouquet of vanilla and toasted oak from the barrel ageing, set against nuanced citrus notes on the palate. Expect it to be full-bodied and powerful, with a deep and warm layered finish. This robust and structured sparkling sake will stand up well against stronger flavours, such as smoked nuts, charcoal grilled meats, unagi, mature Gouda, and dark chocolate. Serve well chilled in a white wine glass to maximise on the aromas and open up its flavours.
