This is Koueigiku brewery’s very first standard sake release which will be available going forward on a regular brewing schedule. It has been named ‘Sukai Seikai’ and refers to the refreshing, clean image of a sea of clouds in the sky, which is depicted on the beautiful label.
The aroma of this Tokubetsu Junmai sake is gentle and calming with white peach, grape and citrus tones. The palate has flavours of baked pear and apple, layered with some flinty mineral and a solid umami afternote. With a velvety texture, mid-range body and off dry finish this is a food pairing dream. A single pasteurisation locks in the freshness and flavour character.
