Yamachu Honke Shuzo created this sake as a tribute to growers who refuse to rest on the reputation of their "place of origin". This highly conceptual and modern Junmai Ginjo sake breaks away from Gikyo’s traditionally heavy, bold image.
The name "Kagaribi" means "bonfire" or "torchlight," reflecting the brewery's wish to light a bright path for the future of sustainable rice farming. It uses top-tier Yamadanishiki rice from the Special A Zone in Tojo, Hyogo, grown by passionate, next-generation farmers who practice sustainable, chemical-free, and herbicide-free farming, and the resulting sake is a heartfelt expression of the rice terroir.
Brewed with Kyokai No. 14 yeast, Kagaribi is designed to be approachable and easy drinking. With gentle aromas of fresh steamed rice, white melon, and a touch of green apple on a smooth palate, it is a subdued version of Gikyo’s signature structured style. The finish is a refreshing, slightly acidic snap that leaves the palate clean and ready for the next sip. Pair this with lean tuna or bonito sashimi, steamed clams in sake, carpaccio drizzled with olive oil, or roast chicken with soft herbs
