This bold sake uses the premium Yamada Nishiki rice from the Tojo Area Special A zone in Hyogo Prefecture, Japan’s top-tier rice region. It is deeply savoury with a full-bodied rice umami, exhibiting hints of yeast, cream, and subtle white pepper. The genshu nature comes through in the lactic and grainy scents. This sake is worth experimenting with temperatures: served chilled, it is tight, sharp, and more forward pinching; as it warms, the edges become more mellow and rounded, allowing the depths of rice to expand over the palate.
With a heavy-bodied structure, high alcohol content, and natural acidity, this robust sake will stand up to rich, fatty, and savoury dishes, especially ones using strong fermented seasonings.
