Haruka is designed to be unpretentious, light, and endlessly drinkable. This premium Japanese sake by Yamachu Honke Shuzo departs from their traditional, heavy sake styles, and designed as an approachable introduction to Gikyo.
In full Gikyo tradition, it uses top-tier Yamada Nishiki from the Tojo Special A area in Hyogo Prefecture, polishing the rice in-house until 60% of the grain remain. Using the Kyokai No. 9 yeast, a classic traditional strain known for a clean fermentation, Haruka is refreshing with crisp green apple with fruity and
floral undertones, finishing on the palate clearly. At its heart, the Gikyo signature savoury umami and subtle rice sweetness unfurls gently on the palate. Excellent with white fish sashimi or carpaccio, chawanmushi, light chicken salads, or fresh mozzarella.
