Niizawa Sake Brewery’s first sparkling sake made using in-bottle secondary fermentation. This wonderfully bright sake opens with delicate persistent beads, and aromas of steamed rice pudding, subtle green apple, and banana. On the palate, the gentle sweetness is balanced with a fresh acidity, while the underlying rice characteristics give it depth. It finishes on a clean, crisp, and medium dry note.
Consistent with Niizawa Sake Brewery’s philosophy of creating food-friendly sakes, this sparkling sake is ideal with oysters, sashimi, tempura, sushi and delicate seafood dishes. Its refreshing acidity and fine effervescence can also complement creamy cheeses such as burrata, or lightly spicy Asian dishes such as Vietnamese green papaya salad. Serve this cold or well chilled in a tapered white wine glass or champagne flute.
Refrigerated storage recommended. Before opening, chill well and do not shake or invert. Slowly remove the top in stages to release the gas slowly.
