Project Series
The meeting of two Japanese traditions – sake brewing and shochu distillation. Abe Brewery uses hashira shochu shikomi for this particular brew, with a distinction - the shochu is distilled from the brewery’s own sake lees. This not only is an upcycling of a sake by-product, it also connects the two beverages with a common thread, resulting in a diachromatic yet harmonious drink that makes the best of both worlds.
The palate combines the gentle sweetness and savoury richness of Junmai sake with the clean decisive finish of shochu. Depending on the batch, subtle fruit notes can emerge alongside a smooth, rounded texture, leading into a refreshing, dry finish. Versatile across serving temperatures, Abe+ is equally compelling chilled, where its crispness takes centre stage, or gently warmed, which brings greater depth to its rice-derived umami. Great with savoury dishes from butter seared scallops, miso black cod, and Peking duck.
