Collaborative Series
This revolutionary, boundary-breaking collaboration between Abe Shuzou and Echigo Yasuko, the producer of YASO GIN, bridges the realms of sake and craft gin. The concept takes inspiration from Kijoshu production, where some of the brewing water is replaced with sake during fermentation, for a richer and sweeter style.
For Abe Yasogin Sake, premium craft gin from YASO GIN is added into the active fermenting mash, allowing the botanical characters of gin to interact and develop with the sake. The result is an unconventional cross between sake and gin that contrasts between rice fermentation and botanicals. Lightly cloudy and effervescent, it opens with citrus, cooked rice, and herbal aromas. The palate is fresh and juicy, with bright citrus acidity, subtle rice sweetness, and a gentle botanical bitterness leading to a clean, refreshing finish. Serve well chilled in a wine glass, the Abe Yasogin Sake is particularly versatile with raw seafood, grilled fish, charcuterie, and lightly spiced Asian cuisine.
