Project Series
An adventurous, contemporary release that showcases Abe Sake Brewery’s commitment to challenging the possibilities of Japanese-style fermentation. It uses the same hashira shochu shikomi method as Abe+, where the brewery’s own shochu distilled from sake lees is added to the sake-making process to bring additional structure, intensity, but with an intentionally pronounced spirit-driven super dry finish.
It opens with fruity and floral aromas of banana and acacia. The initial texture is smooth but pushes to a clean and dry finish. The savoury edge makes it particularly appealing to drinkers who favour dry sake, while its underlying depth keeps it engaging alongside food.
Best enjoyed well chilled, Abe++ also lends itself to a soda serve, where its crispness and spirit-like character create a refreshing alternative to conventional sake. Great with fresh oysters, porchetta, and aged cheeses such as mimolette or comte.
