Star Series
This distinctive, modern sparkling sake is named after the first-magnitude star in the constellation Cygnus, and part of Abe Shuzo’s experimental STAR series.
Using Shunyo rice, a unique variety of table rice originally developed to be low in easy-to-digest proteins, Deneb bursts with fresh grapes and lychee on the nose, a fascinating sensory profile directly dictated by the grain. The secondary in-bottle fermentation produces pleasing effervescence that explodes in dance on the palate. As a cloudy sake (origarami), the generous fine rice sediment creates a textured, creamy mouthfeel. The finish is surprisingly clean and snappy, balancing low-alcohol lightness with a refreshing citrus acidity and an appealing grape skin bitterness at the very end, and enticing another sip.
Due to active fermentation, we recommend keeping this sake refrigerated. Chill well and do not shake before opening. Submerge the base of the bottle in a bowl of ice water while opening, and take the cap off gently and gradually. Let the sediment rise and settle a few times before taking the cap off completely.
