This is the signature product for the Ippaku Suisei series of sake showing the key character of this style, a juicy richness of flavour reminiscent of white fleshy peaches and nashi pear with great structure and smooth texture. The sake finishes feeling slightly dry on the palate thanks to the playful acidity emerging on the finish which also provides balance to the other elements.
The sake is made from locally grown Miyama Nishiki rice and the brewing water source is medium hard, giving the sake a more defined mouthfeel, which the brewery feels suits the single pasteurisation in the bottle. Serve chilled in a tulip shaped glass to enjoy the gentle, beguiling perfumed aromas.
