This is the first Japanese Gin of its kind crafted from 100% wild Japanese “Incense” trees, sourced and foraged from the mountains of Japan in areas that have not been developed. The team from Nihon Kusaki Lab (Japanese Botanic Lab) are focused on adding value to often overlooked and under-utilised natural mountain plant resources in Japan by creating unique, high quality, limited edition small batch beverages.
Drinking Forest Gin is like going on an enchanted tour which gives you an overwhelming 'forest feeling' as if you were taking a deep breath in the dewy depths of a dark green forest.
The invigorating botanical aroma that passes through the nose is extracted from the branches and leaves of the Hinoki or Japanese cypress tree, with a refreshing fragrance reminiscent of cedar and the acidic aftertaste of Kōyamaki, a sacred Japanese pine tree growing in Mt. Koya and used in Shinto rituals. The bark and wood from the Haibyakushin (Japanese Dwarf Juniper) and Nezumisashi (Temple Juniper) act just like juniper berries, enhancing the spicy, floral flavour along with the Okinawan Karagi tree bark and leaf adding a cinnamon hint.
