This is Umenoyado Sake Brewery’s local, easy-drinking Junmai sake named after the famous Japanese Plum tree (Koubai 紅梅) standing in the forecourt of their old brewery headquarters. It was designed to show a good balance of all fermented rice attributes – sweetness, spiciness, bitterness, acidity, and astringency. It is a medium-bodied, umami driven sake showing a very classic and delicious Junmai flavour profile that has benefitted from some maturation time at the brewery to round out the mouthfeel and give a pleasant, refreshing aftertaste.
