This is a limited edition release of the first run of sake immediately after the filtration process has started. This is named Arabashiri, and this special sake is bottled separately and delivered to sake stores in Japan that support the local craft of sake / Jizake. The arrival in Australia of this limited edition is the first international export for this type of Taiheizan sake from Kodama Sake Brewery. The sake range has a very interesting label which details every facet of production including tank number, rice type, rice polishing ratio, alcohol strength, acidity, production month, classification, yeast type, sake meter value and amino value. This is very interesting data for those who like to
dig deeper or compare with other sake in the range. .
The Special Brew Sougetsu sake is fermented with yeast that were isolated from within the brewery (known in Japanese as Kuratsuki Kōbo). In the glass there are aromas of creamy banana yoghurt and star anise, and the sake has a refreshing sourness which translates to an easy drinking style.
