This is a rich, vibrant unpasteurised version of the Kodama Brewery Flagship Tenkou Junmai Daiginjo made with high grade Yamadanishiki rice polished to 40% of its original grain size. This is a limited release, small batch artisan sake appearing at the start of the brewing season annually when it is handcrafted very carefully.
The sake has intense aromas of mango, pear and ripe banana overlaid with some white mushroom, anise and chestnut notes. It has medium sweet layers of pear, apple and melon on the palate with an emerging vein of umami and great finishing acidity which tips it into the dry zone.
