Expertly blending traditional brewing with modern innovations, Inaba Shuzo Brewery, a family run brewery for 13 generations in the Ibaraki Prefecture, has created an unfiltered, undiluted saké brewed with natural water from Mt. Tsukuba. Helmed by one of Japan’s few female brewers – Nobuko Inaba – this Junmai Daiginjo has a limited run of only 7 tanks a year, and is not pressed, but rather allowed to drip out of cloth bags filled with the finished brew, a method called ‘Shizuku’. Exhibiting a vivid, fruity aroma with a clean and rounded flavour, the mellow umami flavour is drawn out of the rice's core as the temperature rises. While this saké has a little sweetness at first taste, the quick, clean finish means it will pair beautifully with Western cuisine.
